SAVOURY VEGETARIAN BREAKFAST LOAF

Brunch. Probably the best meal in our opinion by far. The options are endless. Sweet, savoury you name it. We are loving how creative you can be, and packing in your 5+ a day can be daunting at times but not with this loaf.


WHAT'S SO GOOD ABOUT THIS LOAF?

Carrots, Zucchini, and Spinach make up this loaf in equal parts. We love how dense and nutrient rich this loaf is, rich in Vitamins A,C, and K.

METHOD


1. Grate your Zucchini, Carrot, and strain any excess liquid in a sieve.


2. Make a well, and put the dry ingredients in and then crack 7 eggs. Fold all the ingredients then add the feta, the consistency should be thick and creamy.


3. Preheat your oven to 180 degrees celsius, and line a loaf pan with baking paper and pour in the batter.


4. Bake at 180 degrees celsius for one hour, or until a wooden skewer comes out clean.


5. Serve with butter or your choice of spread.


INGREDIENTS


1 Cup of Carrot

1 Cup of Zucchini

1 Cup of Spinach

200 grams of roughly chopped feta

1 and 1/2 Cup of flour

1/3 Cup of unsalted butter

1 Cup of Colby or Edam cheese

6 Large or 7 Medium sized eggs

1 and half teaspoon baking powder

Sprinkle of salt and pepper to taste
